Chocolate walnut pumpkin cheesecake…YUM! I kind of made up this pie with ingredients on hand that I wanted to use up and was shocked because it tasted amazing! My family loved it. I love when that happens 🙂 I tried to use healthy ingredients. It makes the perfect Thanksgiving or fall dessert! Sarra 9-inch pie dish 1 cup ground chocolate Graham crackers 1/2 cup ground walnuts 5 tbsp coconut oil 8 oz cream cheese at room temp 1 1/4 cup packed baked pumpkin 1/2 cups milk 3 tbsp honey 2 tbsp brown sugar 3 eggs beaten 3 tsp pumpkin spice For the crust mix the Graham crackers, ground walnuts and coconut oil until wet and press into the pie pan for crust. Preheat oven to 350F. In a blender blend together the pumpkin, milk and honey until smooth, set aside. Beat the cream cheese until fluffy, add the brown sugar and eggs and beat until smooth. Add the blended pumpkin and pumpkin spice and keep beating. Add the pumpkin cream cheese filling into the pie crust and place in the middle of the oven. Bake for 45 mins – 1 hr until the filling is no longer jiggly. #veganrecipes #vegan #recipes #caramelizedbutternutsquash INGREDIENTS 1 medium butternut squash (about 2 pounds) 2 tablespoons coconut oil, plus more for the pan 1 tablespoon coconut sugar 1/2 teaspoon ground cinnamon, plus more for garnish 1/2 teaspoon fine sea salt 1/4 teaspoon freshly ground black pepper Coarse sea salt, for garnish DIRECTIONS Preheat the oven to 375°F and grease a rimmed baking sheet. Peel the squash and slice it in half lengthwise. Remove the seeds and cut into 1-inch cubes (you should have about 6 cups). In a large bowl, combine the melted oil, coconut sugar, cinnamon, salt, and pepper. Pour the melted oil mixture over the squash and toss to coat. Place the squash on the greased baking sheet and bake for 40 to 50 minutes, tossing every 15 minutes or so to avoid burning, until caramelized and fork-tender.
